1 cup serving; 160 calories, 0.6 gms fat, 0 mg cholesterol; 7 mg sodium
1 cup serving; 264 calories, 0.6 gms fat, 0 mg cholesterol; 4 mg sodium
1 cup serving; 34 calories, 0.2 gms fat, 0 mg cholesterol; 21 mg sodium
2" sq piece; 198 calories, 7.3 grms fat, 0 mg cholesterol; 232 mg sodium
Preparation:

Black-eyed Peas: prepared by soaking overnight or boiling in water to cover for 3 minutes then let stand for 1 hour; add onion and seasonings such as pepper, garlic powder, Mrs. Dash sodium free product, liquid smoke and cooking peas for 1 hour longer.

Rice: is prepared by boiling 2 cups water with 1 teaspoon salt and 1 tablespoon butter (optional) add 1 cup long grain enriched rice and simmer for 20 minutes until done.

Collard Greens: prepared by washing 3-4 bunches and removing stems from greens, tear leaving into bite sized pieces, add greens, sugar, salt, and pepper to smoked turkey parts for seasoning. Boil for 2 hours.

Cornbread: prepared at home use 1/2 cup cornmeal; 1/2 cup flour; 1 tablespoon baking powder, 1/2 teaspoon salt, 1 tablespoon sugar, add 1 egg and 1/2 cup of milk and pour into in skillet that was heated with 2 tablespoon oil. Cook in hot oven (400 degrees) for 25 minutes.
